Things I usually look for in a Minecraft server:
- Kind staff and leadership.
- Bountiful updates.
- Unique and engaging content/experience.
- A community that's at least 20 users to keep me company.
I would start with learning Java first before you focus on Minecraft plugin development itself. Codecademy has an excellent beginner and intermediate java course. After that learn Bukkit and Spigot. Mineacademy is a great resource like mentioned above.
I've used Apexhosting for years and have had a wonderful experience. It's easy to use and affordable, especially for those that are just starting to get into owning servers.
Aquila would be cool or AquilaMC. It could be Greek-themed and match your color scheme. You could have several worlds/maps/islands titled Olympus, Tartarus (Underworld), Atlanta (Sea), etc.
