Yes, they do have a verification process, however it doesn't seem to be triggered in all cases.
I've ordered services from all three of their brands (OVH, SoYouStart and Kimsufi) and haven't had to send them verification documents.
From what I've seen on forums, if you order from a 'low-risk' country and have the name and address on your PayPal match what you have in your OVH account, you won't be asked to send the verification document. Not sure if this is actually the case, or if I've just been lucky.
