There is something that I don't like about discord that it can be changed easily and modified (locally) using Inspect Element, I have tried it myself. To be honest here I do not trust it when scam reports are made and proofs are the discord chat itself (application or web), so what I think is better if they would like to have proof of something they could take a gif of it on the discord web and refresh the website then head to the conversation that they would like to submit as proof.

In a scam report, if I faked screenshots of you saying stuff in a Discord conversation even though you didn't, you could easily just show what the real conversation looked like and then maybe at that point a staff member can ask for a video / gif.

Scam reports are a pretty big thing, could range from a $2 issue to a few hundred of dollars issue. I think they should go as fast as they need to. It's like in court if I'm sueing someone, it could takes months. Scam reports can take a few days or a few weeks. That's normal.

Yeah you are right, but in court if sufficient proof is given they rule the verdict in the same day.

Im not trying to say you are wrong, but as I said before Im doing this for efficiency.

To my knowledge, this isn't something that has ever been an issue. As Zalbus said if someone does provide faked proof, it will be very easy for the other party to disprove. All I can see enforcing something like this doing is leading to proof being harder to submit and review, so it doesn't really have any benefits.
