Hey everyone, can anyone provide me some choices to choose from? I am wanting a 64-128GB ram dedicated server. What host do you guys prefer?

Depends on your player count and desired data center location. If you are planning to have a max of 100 online, I'd use 1-2 kimsufis. Kimsufi servers have a bandwidth of 100Mbps, a player uses an average of 1.5Mbps, the bandwidth being the main bottleneck we have here.
If you're planning to have more, get an OVH Germany VPS and use a haproxy setup to use Hetzner as a backend.

If you don't want it to be in Europe, go full OVH from SoYouStart, Kimsufi, or their main website. Keep in mind to choose only high clocked CPUs (4 GHz+) or it's gonna get laggy.
