Honestly, you can follow a guide and setting things up on it. You really don't want to use Multicraft on a dedi to run your servers, but rather multiple screens. If you just google "Running a spigot minecraft server on centos guide" you'll get a ton of useful articles. You won't learn if you don't do some research.

Ubuntu, Debian if you are a beginner since there are lots of tutorials about them. Go with Centos if you are experienced

Centos would be the best if you want to use Multicraft.
