I'm just wondering - if I buy something in america (because its cheaper) and then get someone to ship it to me (US > UK), do I still need to pay the VAT for the UK and how does that work?

It doesn't matter. You will still have to pay the US tax & you risk someone jacking your shit.
I personally would spend the extra $ hundred or whatever it is to get it shipped to you directly and you for sure know you will get whatever you're buying rather then losing all the money anyways
