I see alot of people say "Oh get a youtuber to make videos for you" but I just can't imagine players staying after the youtuber leaves the...
It's definitely possible...
Of course there are effect plugins that add trails and such to a player.
Perhaps access to /nick without color
Then /nick with color?

Are you running paper or spigot or maybe a mod pack?
I agree, your issue is likely caused by poorly optimized plugins or errors in configuration.
Is there any errors/warns in your console? Although it is sometimes impossible to remove all warns, you should be able to remove all errors.
