If by 'Server' messages you mean the little prefixes that go before every message/announcement, you can find them in pretty much every plugin config that uses that sort of message. Simply open the config and search for 'Server'.

Hey, I noticed the messages.yml file is not in essentials, preventing me from changing color scheme & other message formats.. Do you think you could add that & or send me a direct link to the messages.yml file?

I could upload my own but then I would have to go through and change all 500 messages and I'd rather not.
