Minecraft has recently added the ability to change/make 3D models within resource packs. This is possible through programs such as BDCraft Cubik or Blendr (with addons). These models are stored as .json and can be put directly into resource packs. They support UV and 22.5 intervals for rotation. You can have the models as large as 3x3x3 for blocks. However, when working with held items you can scale them by up to 4 times the original size. See the thread I linked above for an example of this. This means with some creative armor stand work and a remodeled item you can make a 12x12x12 model. You can have models pull from any texture file and they are extremely flexible in terms of model resolution. You can put a 16x16 texture onto a 32x32 element facefor example. Hope this was helpful!
