One thing I've learned is that people aren't necessarily the same over text than they are in person. Try talking to her more in person and see how that goes, you may not even like her. For example, I had a friend recently who was texting a girl and told me he really liked her, but once they started to talk in person, he realized she was really different and decided that he didn't like her anymore.
Now as for her current boyfriend, I don't think that relationship will last so you might just want to wait it out so that you don't cause any conflict between you two. I would say that the longest it would last is around 6 months, seeing as this is a freshman relationship. I could be wrong though, this is just from my experience.
An alternative to waiting it out, if it seems like they're in it for the long haul, is to just become really good friends with her. Become someone she cares about and be there for her. Once you get to that point and you feel the time is right, tell her about your feelings. She will not ditch her boyfriend right away and date you, but you're letting her know about how you feel and the second that boyfriend does something stupid and she realizes that you're the right guy, that's when she'll dump him and come over to you.
To make her laugh, well, just be yourself. You don't want her to like someone who you're not, otherwise it just ends up being a fake relationship, you want her to like you for who you are.

School is busy and it's hard to find time to talk to her when her boyfriend's there.
