Try to code some plugins for yourself or what I want to do is make a server out of fully custom plugins (you can possibly sell it in the future but its still really good experience) obviously keep this local host unless you want to release it. Also, this will greatly inprove your knowledge and possibly force you to work with database languages for cross server work (another really good skill to have).

Making free plugins may also be a good option as you can build up a rep on mcmarket to show you are trustworthy, personally I have mine on discord but thats besides the point.

Personally what I am going to do is sign up to a website like wix and make a portfolio so I have all my work in one place so I dont have to show all my work and its all in one place and dont bave to send pics/videos every time. It doesent have to look beautiful to start off with but people always ask for one so its worth having.
