When I use X-Ray (I haven't in over a year) I just use an X-Ray texture pack. I'm pretty sure it would be impossible to block that with a plugin.

Well, it's possible to block it with a plugin. For example, try it on hypixel's uhc and it will just show up a bunch of valuable ores all around you, even on the surface. It's as simple as modifying packets, but can take up some ram.
