Any hosts that'll accept a one-time payment for 2.5GB?

No hosts would take this, They need to pay monthly to keep their servers up.

That isn't possible unfortunately. There are monthly/recurring costs for the host associated with electricity, network and rackspace etc.

Your best option would be to work out an annual/bi-annual deal with a host.
