I've seen multiple methods where you have to open a transaction of Bitcoin on the site, use a script to "change local date", it give you another BTC address because the other one has "expired", you have to send money to one of the addresses, it gets refunded, but you still get the product, blah blah blah.
Are these methods real or does the script just change the wallet address to theirs and never refund you, and use the script to seem like it worked?

No it isn’t. You’re literally paying and giving free money to the scammer/person who gave you the method.
