I actually host parkour/adventure servers on Xbox One and have found that there's a lot of people interested in these types of servers.
However, in my experience, it helps to mix it up and instead of aiming for pure parkour I create more of a full on platforming game experience with parkour included along with mazes, dungeons, traps, gear and mobs to fight.
I also find a lot of people who don't enjoy parkour are mainly people with little parkour experience who don't understand how to properly do parkour in minecraft. I think a good parkour server should include a training or tutorial course that explains things like how to properly line up and land jumps on different surfaces, ladders, slimes, cactus, etc...
Just a complete and satisfying gaming experience that takes a couple of hours to complete would probably be just fine. I can't speak much for the PC side of things but when I run my xbox server I've always got a full server and I've hosted thousands of players.
