Is this possible if i decide to buy minecraft server with good playerbase for "X" amount of money, before that to create a Contract for both sides. Buyer and the Seller?
I don't want to be scammed, he want Bank Transfer!

well depending on who you're working with most likely they wont be able to sign a contract legally , this is a minecraft market after all its pure cancer

Yes, you could draw up a contract yourself and have both parties sign it. If the other person is underage, they will have to have their parents sign it.

Also, if anything goes wrong and you don't plan to take it to court, it's pretty much pointless.

As long as you both agree to it, it's legally binding and can be used in a court of law.
