Hey there, You can't edit the models of entitys in MC to have tails (3D) you can only change the way it looks on the custom template
You can however edit blocks/items so they look like dinosaurs but they wouldn't be able to PVP
I can help you with either of those but none of them are perfect

Wouldn't he be able to get an invisible mob in the item, so there is hit detection?

the Giant would be a T-Rex with custom drops with a egg ect

I tested this out with a team on another project we also did like bats on armourstands but It was more glitchy than not and would really ruin the pvp experience -.-
