I'm looking around to get a dedicated server for a minecraft network that will be revolving around a custom theme park and some other projects as well. Looking to get a ryzen cpu with 128gb of memory because of the projects I have planned alongside a modded smp as well. Budget is roughly around $100-$200

Pebblehost is the way to go. If you're looking for Eu location basically its the most premium option 4now it also has an addon for cosmicguard protection at a very reasonable prices. https://pebblehost.com/dedicated/

SparkedHost is a pretty solid provider! Looking at their website, Dallas runs on CosmicGuard DDoS Protection for Dedicated Servers.
We used to use CosmicGuard in Dallas and did not have a good experience. We noticed a consistent 30ms increase in ping when using Cosmic, for both Dallas and even other locations. It was very unreliable as well and we were constantly getting reports of issues. We finally upgraded to NeoProtect and switched off of CosmicGuard. Latency and overall reliability has drastically improved. Though some advocate for CosmicGuard, others haven't had a great experience, including us.

NeoProtect is seen as an industry standard for DDoS Protection, and is included for free with us.

You guys don't charge sales tax? Because I've noticed with most they charge tax when I never experienced that before

Hetzner is only EU based sadly, I wish they had US locations but it's only for their cloud or whatever. I've had OVH in the past but not a fan of the contract system

We don't charge for it.
