The name of the moderators. OP, you were hiring developers for a "large project" and can't even do this? Well, you can either do it by:

• /nick &c&l(any colour and any code)Name
• In the prefix, for example, &c&l[&b&lPrefix&c&l] &c&l(this is the name colour)
• In the chat manager you use's configuration, you can change what the specific group's chat format is, just add a colour in front of the moderator's {DISPLAYNAME} variable. You can do the same with text, or get the ChatColour plugin from Spigot.

No need to be rude, it's not his fault he didn't guess you were using a forge mod called toggle sneak when you say "change color and text of mods", you need to be more descriptive.
