Do you believe the popularity of Minecraft is dwindling, or that people are migrating to a better version?
Some say that it is, but they only look at Hypixel's statistics, which shows that Hypixel itself is on the decline (another subject), but what about Minecraft?
I'm noticing a trend where older versions are slowly dying while newer ones are springing out, performing really well in terms of sales, constant play count, and content.

What are your thoughts?

Minecraft is not dying at all lol, I have absolutely no idea where people are getting these statistics from? Minecraft has grown tremedously over the past couple of years, especially since COVID-19 started, most likely from the likes of Dream, MrBeast and similar youtubers. In terms of older versions, I don't think it's quite dying, if you look at servers like MinemenClub, they are constantly hitting newer, higher numbers and peaks. In terms of the HCF/PotPvP community, it's staggering yes, HCF is no longer what it's used to be, however people need to stop thinking or saying "Minecraft is dying" because it's not lol, they've been saying it for years, and it's still very much alive. Newer versions will of course have a more stable, solid player base, just like any other game, who wants to stay on an older version?

I agree with you on all but one point, Minemen's playerbase only consists of Lunar's old players.

Minecraft will remain one of the most popular games out there to be honest but take in account that some also play minecraft singleplayer so we cannot decide if minecraft is really dying based off only Hypixel statistics but I don't think minecraft is dying as a whole thanks to his "elasticity" and what I try to say is that multiplayer servers offer a large selections of gamemodes. To answer shortly, no minecraft is not dying and we cannot decide that on Hypixel alone, because at the end of the day, Hypixel is not the only server out there.
