Not completely sure the taste in water changes. Let's look at this from a chemical point of view, it is a liquid meaning it's particles are fairly uniform but move around a bit. When water is heated the particles gain more energy and move around more, this makes the water less dense, much like when water is boiled to become a gas. If you have a higher temperature water the particles will be more spread out which may be what is affecting the "taste" of the water.

The colder the water, the more gases can be dissolved in the water. So when you heat water up, the gases are kicked out of solution and escape to the air. That affects the taste.
I only recommend drinking 100% rain water. Some people collect it in a bucket but it's much easier to use a kiddie pool as it holds alot more and can be squeezed through the back door
