your choice, you will get less potential clients as people wont bother to add a person on skype and then realise that his builds isnt something they fancy

This seems like a scam any good builder would release he's portfolio if he knew that he was good, as it would increase their buyers. However because you choose to only show it in private makes it seem like you are showing somebody else's builds as you know if you showed them publicly someone would notice it and call you out. I would watch out when buying from this guy.

Yeah vouch copys are a good way to get your service started
If you want people to be interested, i suggestion that you do a portfolio. It gives people something to look at while thinking about getting a commission or not. Not over skype.
Where do i go to make a profolio? Sorry im a tad bit new to stuff like this
