Right now it’s like:

What chat plugin do you use? Are you using deluxechat or essentials?

CTRL + F, type in format and the format with be in front of you, from there you are free to remove the "<>" be sure to save and reload essentials with /ess r

Go to essentials config and look for essenentials chat and find where it says format: <{display name> {message}>

Make sure the encoding format is correct or the symbols will end up looking wired.
