Just saying that no one will be imprest to see that you did small projects in your portfolio, people want to see big interesting stuff and that you are experienced
Not some small plugins with 3 commands and a GUI and a few events
You better search job requests that ask for medium to big interesting projects and charge between 6$ - 27$ per hour according to your skill level and ask for permission to show the GitHub repo to future employers under an NDA (if possible).
Or if you're ok with it just make something that sounds interesting just for the portfolio and open source it, I would say this is the better route because you can work on what you want and what you know you will do best, if you're ok with not getting paid for it
This is more the kind of stuff you want in your portfolio anyways.
