Game recommendations

Looking to spend a couple bucks (not literally $2) on a game, but I want to play a worthwhile game.

Interests:
- RPG (not MMORPG; rather, singleplayer RPGs)
- First person preferred
- Open world/room for exploration
- Doesn't have to be multiplayer/online

What I'm considering:
- Dark Souls (I'm hesitant because it's supposed to be extremely difficult)
- Witcher 3: Wild Hunt (Very interested)
- Undertale
- Bioshock Infinite
- Hitman 2

Any recommendations? For the listed games above, is there anything I should know before investing in a few of 'em?

p.s. please don't say "oh but games are subjectively 'good' and therefore asking the community for recommendations is pointless"

Civilization V (Complete Edition) is one of my favorite games and can be bought quite cheap on sale.

I know this doesn't fit your interests but Rocket League is fun.
