Hello MCM.

As im a noob regarding dedicated servers and what they can run ish...

How many Minecraft servers would the server below be able to run?

Intel I7-4790K 4c/8t 4GHz /GHz 32GB DDR3 1333 MHz 1x240GB SSD

It’s not as simple as how many, it entirely depends on the setup and the plugins used. In extreme cases, a single 10 player server could use more resources than say 4, 50 player servers. However its a pretty good dedi. So unless your setups use abnormal amounts of resources, you'd be good for a few 100 players, across quite a few servers.

Ive had pretty decent luck with SoYouStart. If you are able to manage the Dedi yourself, youll be fine. If you cant, dont expect their support to do much...
