It's probably a custom plugin, but it wouldn't be too hard to make, just store the date the server was created in a database and update all players with that inventory open every 20 ticks

You could also make a PlaceholderAPI placeholder that you put in a start date and it will count how old it is based on what day it is and what the start day is.

Example:
%serverage_09_13_2018%
Then have this placeholder count up.

I was just saying, if he can use pre-existing free resources to make this then go ahead but if not I could always do it.

You have to add a plugin that start a timer when the plugin is enabled and store it on a database (add this plugin on the server you want to get the age). Then you have to add to your hubcore a repeating task (20L) that update the item if the inventory is open for that player to set the database timer on the item lore.
