How can you make sure a developer doesn't steal your server?

some server owners have their developers sign contracts, I'm juts wondering what different people do, no harm in that

#1 Don't open a server
#2 Developers usually work on their own test server or company's, but you should never give them your own server panel access unless you trust them, and you would or should make them as a sub-user so they can only do specific things, but I would still use backups or make a backup of your server beforehand.
