How does game development work?

So i'm looking into game development.
I know you must learn to 3D model and need to learn to animate.
Then the code aspect:
There are engines but they make the same thing and have smaller amounts of options
Are most high quality games like Call of Duty made in pre made engines or are they made in like custom made engines.

Our questions our
what softwares for animation and 3D modeling should we learn?
What code language should we learn?
what is the best engine?
How do we make our own engine?
What else must we learn before we begin?

I've seen CryEngine mentioned a few times, personally would stay far away from it. They've had major financial troubles for a few years and many failed game launches meant to get them out of it. Amazon had to buy the old engine to bring them out of their financial issues the first time around and they just fell right back into it, at some times not even being able to pay their employees on multiple occasions.

(don't bash me for this, i am in no way an experienced 3d modeler and never claimed i am one, lol) I believe CUBIK STUDIO has an option to export as .obj? This can be used for unity, i could be wrong - but after exported said model, you can rig it on something like blender and it should work - but you shouldn't ask me about it, i'm no animator or modeller :p
I mean for a beginner who is just developing basic games Cubik engine could be an option, it does cost $20 I believe. I do own it I bought it way back and some of the concepts used in Cubik that are further used in more advanced modelling software's would defiantly help a beginner out.
