I'm interested in what a large group of servers of these specs would cost.

Intel Core i7-9700K
256GB DDR3 RAM (128GB if that's not a thing)
No GPU
~1Gbps Connection
128-256GB SSD

How much would just one of these cost monthly?

No clue but i'd suggest more disk space

Will I still need more disk space if I'm not using many programs, but running several dozen concurrent instances of those programs?

Might be more worthwhile looking at a 9900k, it should only be marginally more expensive but offer better performance with hyperthreading enabled.

How much would just one of these cost monthly?

That CPU would become a bottleneck with 128GB RAM. I wouldn't pair an i7-9700k with more than 64GB RAM.
