Because RAM isn't everything. CPU and network performance are also a thing, as well as storage speed and how loaded the node is, and geographical location of the server.

One tip is don't get a host that is super cheap like ggservers and shockbyte, they have slow performances.

GGservers is certainly not cheap... As far as the performance, I cannot attest to that. I do know that saying low prices equals bad performance is pretty stereotypical considering I know quite a few hosts that offer amazing performance for a low cost.
https://zerolag.host is a prime example, yes we are new but we look at hosting as a hobby and not a job therefore we put a lot more TLC into the services we offer. Not only that, but myself and my partner are both I.T professionals in our career and we value quality of service as we are gamers ourselves and we know what its like to struggle with bad hosting.
