I don't actually need these plugins, but I wanted to give you somewhat of a challenge. Try to extend on these basic ideas and make sure to include detailed configuration. These would be good, unique ideas to use on your portfolio; I just made them up on spot. Hope you learn tons and enjoy your time programming! 
Plugin 1: EntitySpawnGUI (3 days)
Create a paginated GUI filled with all the spawn eggs available in the creative menu. When a player clicks on an egg, make it open another GUI where the player can select the entity's name, age (baby or adult), and color (for entities like sheep).
Plugin 2: HealMeUp (2 days)
Create a plugin which automatically heals a player that has been out of a fight for (x) seconds (10 for default). Heal them at a rate of (x) hearts per second (1 for default). This will replace the default healing mechanic.
