Just a heads up: This isn't something you can achieve this without a client-sided mod. The video you linked utilizes Openboatutils. Player movement and position are handled client side, with the server performing some validations. If no mod is used, and you were to modify the player's position and persist their velocity, anything but perfect latency will cause issues. It will feel very janky regardless of the implementation.
