Should I go with an OVH dedicated i7 game server or an E5? I'm going to run 1 cannon testing server and maybe 2 or 3 private small servers with 1-2 people on. Which would be best for TPS? It'll be cannon testing so there will be tons of TNT going off.

Depends on the clock speed.
i7: 4-4.4 GHz, vs an E5 at about 3.6 GHz?

(Would it be worth going with SoYouStart's game server dedi instead for $10 cheaper each month? It's almost the same specs except for the amount of SSD storage I think)

The i7 sounds better I guess.

It would be very close. They are both as good as each other really, maybe the i7 would have the edge, and if you are looking at the two on OVH, the i7 uses DDR4 RAM, where the E5 is using DDR3. So overall i would say the i7 would be the better one.

The i7-4790k from OVH is on DDR3 RAM. The i7-4790k does not support DDR4 RAM.

Considering what you said in OP, the i7 would be a better choice and will get the job done just as well.

Interesting.. the i7-6700k isn't on the US website but is on the UK website. My bad then.
Interesting, wasn’t aware before that there where different products on each site. I always assumed they were the same.

i7 is definately better, but OVH curently offers sales on E5 machines, which means you can get E5-1620v2 with 128GB of RAM for 74€ a month while i7-4790k with 32GB would cost you 86€
I'd pick E5 if i were you (because of curent sale), but for later on I'd use i7 if I wouldn't have enough money to keep up the 148€ E5 server.
I hope I helped with my opinion ^^

Okay. Is it worth going with SoYouStart's 32 GB game server rather than OVH's for $10 cheaper? I think the connection speed is a bit slower and the SSD storage is about 150GB or something instead of 250.

Xeon is generally better for anything minecraft, as the extra threads will help you. I'd honestly go with the E3 if it wasn't too much more expensive.
Not true.

For your requirement, OP, go with the i7.
