I'm just advising you guys on countries you should avoid for hosting things that you maybe don't want governments to see, or something that's illegal but you want a place to store it where nobody will ask questions, and you won't have any issues. Don't worry about any of this if you are just hosting a game server, I would only worry about things like this if you're a hosting company, hosting things like virtual private networks and you have a "0 logging policy" (what a meme) or mail servers. If you're just hosting shit like Minecraft servers then I don't see any reason for you to be worried about privacy.
These are the countries I would avoid: United States, United Kingdom, New Zealand, Canada, Australia, the reason for this is there are in an agreement (called the UKUSA agreement) and this basically means they collect and share info (together). The countries I prefer to host my stuff in is usually Iceland, Netherlands, Switzerland, Belgium and Romania, even Ukraine is a known safe place.
Just a heads up though, message me if you want me to go into further details. A good company I recommend for hosting your Minecraft server, especially if you're in Europe is https://www.alliumhosting.nl. No I'm not being paid to advertise, I just recommend them because they are hosted in Netherlands, have DDoS protection (although you could use a gre/ipip tunnel still) and have very good pricing (good cpu and good amount of ram for not a lot of money, also the network speeds on the dedicated servers are 1Gbps). Here is a speedtest I did on a VPS with alliumhosting, the results were very surprising and very good.
