I personally would stick far away from CentOS, it is not the best server software to use for minecraft networks or gaming networks in general.

I would use an alternative to CentOS if I were you. Nevertheless, there are hundreds of tutorials on how to do the process, which are easy enough to follow. I highly recommend you give it a go.
