If you are making a PvE type server, go with 1.12. Otherwise, go with 1.8.

Eh, 1.16 will be the best I believe once it gets out, there's been tons of optimizations and bug fixes. 1.15.2 makes any server shit bricks every 5 minutes because of its performance.

very alive however good chance 1.16 can kill it- so far no major updates to the actual gameplay and experience, small things e.g. pillagers and mobs were added 1.8-1.15, however 1.16 is gonna be huge.
