Learn java first. Trying to learn specifically for the spigot api is like trying to learn to run before you can walk. My best advice is to find a free month trial of like Udemy or SkillShare and take some beginner java courses for free. You need a good basic understanding before branching out. Watching videos on plugin development without knowing the language will just lead to poor understanding and skidding everything.
I don't recommend Mineacademy or the course from xFuzzy. I tried them both and I would use better sources like Udemy Courses or free websites or youtube tutorials from real professionals. Start with simple java tutorials and try to learn a little bit everyday so you make a habit out of it because consistency is the key. If you aren't a guy that loves learning you will lose motivation often. Go into the Spigot Discord or other Discord and look at stuff they made to feel motivated helps me alot.
You can get 3 months Jetbrains Academy for free its a really good platform. Codecademy is also really good for beginners and some stuff is free there too. If you have good java skills you dont need a course to learn an api..
