If i sell my server to someone (all files, logos, artwork and domain) would there be a possibility of him being able to chargeback? apparently he's only able to send money via goods & services via paypal.

Let him send G&S. Record the entire transaction. If he attempts to chargeback, provide the proof that you sent him everything and that he now owns it.

If you're going to accept g&s just make an invoice and detail out exactly what he will get and then email him the files. Discord or skype messages do not count as proof.
