That various widely. My survival server had 64gb because we had custom plugins, 100+ players on, everything. A community SMP needs like 8gb

Like Cristaf said, it depends on different things, how many plugins, how many worlds, how many players etc etc.
I tend to be a magnet for plugins so I usually have 16GB, and well I have a small community.
