Mostly about the CPU, which with shared, will be used by loads of other servers.

What makes it unviable to go shared then?

Provided that the nodes are well managed there shouldn't be the "noisy neighbors effect" which would adversely affect the servicing.

Just like with renting VMs it depends on how the "host" machine is configured and managed. In fact a quality shared service could outrun a crappy dedicated/VPS server.

Well, if you're looking to host 150 players, shared wouldn't be the best, it doesn't leave you any room to expand.

There are number of providers whose will grant you more resources than their maximum resources on their servicing page allows for. Any business that isn't willing to deploy larger custom orders make no points at all.

I was talking about shared Minecraft hosting.

The logic is the same though even though we are talking about two different services.

You will still hit the CPU limit, expanding the RAM means nothing. You can't just allow the client to use more CPU than other clients using Multicraft.

That's where nodes' managment come in. When you have a larger demanding order you would simply load them onto a "fresh" node/existing lightly loaded node.

This how a VPS company operates using more automated means because they have tools unlike Multicraft. However that doesn't means a host is out of options other than upselling them to a dedicated server/VPS with zero management.

Though you may have to pay more than ~$3/GB it will still be cheaper in most cases as management itself what really drive up owning a VPS/dedicated server yourself.

You can't just move a MC server to make room for a larger client, without annoying anyone else.

This is why you either deploy a fresh node or put the larger client on an existing lightly loaded node and close it off prematurely. Problems solved and it should remain stable as long as you are proactive, using decent hardware, and etc.
