That's quite a statement considering a majority of hosts fail within the first year. Do you have any backing to this meaning that, if you collapse, they won't have just wasted their time?

I think you mean if. You're asking for free labor with no guarantees of pay.
You can't expect people with experience to work for free.
Offering voluntary roles to gain experience and training, fairly acceptable.
Offering voluntary roles and wanting them to have experience - no.
On a slightly personal note - I absolutely hate the word "workers", I find it lacks any respect for your staff. Employees, staff, contractor etc are much better words IMO.

volunteers == no payment
I'd agree here, in that the term "workers" shouldn't be used, thus I advise you rephrase
