Make a Server on 1.12 or 1.7

In the future I'm looking to make a really cool game mode but I don't know what version I should do it on. I want it to be for Pot PvP but it is dying and I'm stuck. Is there a way to remove 1.12 features to make the PvP actually good or no.

There are a few modifications on Spigot that allow you to 'imitate' 1.7/1.8 PvP but seriously don't rely on them to get you perfect PvP. Simply put, a lot of the PvP mechanics is client-side (block-hitting, for example) and you simply won't be able to get those back.

But I'll also say, on the other hand, that you don't want to use 1.7 for a server version. The newer versions (1.12.2, etc.) are more supported and have more exploit fixes. You'll be able to find some patches, probably, but it's not worth it imho.

This is a big problem with current Minecraft servers, that want to allow the most amount of players on, without sacrificing gameplay and performance. What I recommend is running the latest 1.8.8 Spigot servers and then using ViaVersion and ViaRewind to allow all clients from 1.7-1.12 on. I highly discourage the use of ProtocolSupport, because of its known bugs and issues. From my experience, you will find the most plugin support on 1.8.8 over any other versions on SpigotMC.
