Honestly after working internships with hourly rates I don't think I could go back to ever working for pennies developing plugins

Honestly it's pretty fucking hard. I have past experience so that makes it a lot easier. Many companies will just toss your application in the trash if you have no work experience, I suggest working on some bigger personal projects.

It's the real catch-22, you can't get experience without a job, but you can't get a job without experience.
