They've given me instructions but it hasn't worked. I was hoping maybe someone has had some personal experience with this and could share how they did it.

I don't normally use an SRV for directing domain traffic to a minecraft server. You should be using an "A Record" in Namecheap pointed at the servers IP (only works if it is hosted on the default mc port 25565). Otherwise I don't know because that is the only way I have ever done it.
