Centos (latest) but ubuntu is easier for beginners (If you are a beginner).

Centos comes with pre installed FTP, if you are a lazy noob (like me) use centos if you dont have much linux skills and dont know how to install vsftpd or sftp...
Also centos is recomended for Multicraft if you are ever going to install that in the future...

CentOS is not harder then Ubuntu, take the one that suites your normal needs the most. The one you begin with will to 90% be your favorite Linux OS later, i started with CentOS, so mine is CentOS.

Minecraft > CentOS
Counter Strike: Global Offensive > Ubuntu

CentOS: Most stable, but less updated.
Ubuntu: Often updates their programs, but a little bit less stable.
How is Ubuntu less stable?

Ubuntu adds new things, centos rarely does, this can cause errors with Ubuntu.

That was back in 2009, and for all minecraft purposes - ubuntu is as stable as can be.

Centos all the way.
Disregarding personal preference, Ubuntu is a better OS in general. CentOS is old and clunky, plus includes repositories from so long ago that nobody even remembers them.

works great, nnot for csgo, but if you ask hosting companies for Minecraft, most of them will use CentOS.
What is there even to say "I do" to? I wasn't talking about who used CentOS.

It's literally personal preference. CentOS does not provide any advantage over as an distro than Debian. The reason why Linux is so preferred is because it's great for server environments (Valve games being one of the exceptions). Low memory consumption, advanced, some of the best tools, it's literally amazing and great for performance for the server.

Debian, personally, is my more preferred distribution of Linux. CentOS has a few erks to it that I really hate, and Debian is very fluid and smooth for me. So yeah, use what you like. Debian is great, CentOS is great, as for Ubuntu - you might as well use Debian, to be honest. There are a lot of distributions out there, whichever one is most comfortable to you is the one you want to go with.

I think it's just something spread around that CentOS is a god for Minecraft, and a majority of newer hosting companies just go with that assuming it's better. A lot don't have qualified sysadmins. Higher up companies will probably agree that it's more on personal preference and what tools are available on the distro and if all of them that you want/need are available. When you start reaching enterprise levels with so many machines, it ends up being that you 'link' them all together in a 'stack' (you can do more research on this if you like, it's great). When that happens, it's much easier to have the same OS through all of your machines, so hosts just stick with what they've got to prevent OS reinstallations. Stacks can work differently per OS, but that's just more work when you need to do enterprise work.

Debian is much easier I'd say, CentOS has a lot of erks and when you fall into them, well it's hard to get back out. I really hate some aspects of it, there are some major flaws. It's personal preference as far as ease goes, but a beginner should fall into Debian easier I'd say. Debian is kept more up-to-date than CentOS, so if you wanted to class that as security you could. Ubuntu is (essentially) based off Debian too, and that's widely used. That's just one distro that uses its base. I wouldn't say it's more secure, but I'm yet to have major distro-level problems, usually it's packages that are included by default in the OS, which is why it's best to keep up to date where possible. Both are kept up to date as far as ground breaking bugs and backdoors go, but Debian is way ahead in the 'innovation' department, while CentOS updates take longer. CentOS releases are also supported for a longer time, since Debian throws out new releases quicker.
