What warrants a product to be paid for? What sort of things do End Users look for in order to actually spend money on software? What type of software do they actually look for and how do you reach those people?

PebbleHost
High performance, consistent uptime and fast support. Minecraft hosting that just works.

Relating to MC like plugins, if an equivalent software is free, you would want to make your product a bit upgraded or unique to make it worth paying. I'm not really sure about software in general. Depends on the demand, quality, and if there's any free alternatives.

What would be the best way to find the right price? Polls? Testing? Just start selling?

Start with smaller things with low prices. Gauge how you should scale your prices depending on the quality and size of the product. Mostly experimenting I would say
