Turing off VSync made my FPS go from 60 to 150.
Installing optifine is also great. My current FPS is 300+ ;D

Turning off vsync creates screen tearing. Plus you wont notice any difference after 120 FPS

If you have issues with screen tearing or any other issues with FPS lock, then some things just aren't for you : p

Minecraft Press Escape > Settings > Video Settings

And then slide the max framerate setting to something other than vsync.
