I was thinking of creating a server that simply is a PVP arena with different kits unlocked via kills over time.
Would a simple idea like this do well or is it not worth wasting my time?

kits/practice servers don't do super well (especially economically), they're always another added gamemode to a network or something to do in the hub.

Ah thank you for the feedback. What type of servers do well now on MC I haven't played for a while now.

i've had good experience with SB/Prison, but i'm sure there's plenty of others out there.

Except for Hypixel, only a couple of legacy combat (1.8) servers are hovering above the 100-player mark. You'd be better off either building a bedrock server or focusing on 1.19 features.
