i recently sold someone a fn account but somehow the gmail got pulled. I'm working on getting on contact with the owner, but I just want to know how he pulled it?

I changed password, phone number, recovery email, 2FA on phone and sms

How did he take it back?

and for future reference, what can i do to secure it?

High performance, consistent uptime and fast support. Minecraft hosting that just works.

He may have been logged in the account even after you changed the info, or he contacted gmail or something, I have had this issue before and I am still not sure what happened.

As this user said, it's very similar to getting full access to a Minecraft account. If you have the OG info (IP and exact date/time of creation) you can pull a gmail too, via customer support.
Ok, so I'm guessing the conclusion is that Gmail is horrible and can easily be pulled

What email providers are secure and is more difficult be pull?
